Documents that require extensive formatting such as columns, tables, graphics, headers, footers and so on can take twice as long to complete, depending on the complexity of the work involved.
Of course, if the original source is difficult to decipher, whether from poor handwriting or a disorganised layout, this will impact further on completion times.
